Nanostructures, man-made or naturally recovered, are materials which often have specific properties due to their small particle size. Being on the nanometer scale (nm; a bacterium is about 1000 nm long), nanotechnology is supposed to play a critical role to solve the problem to obtain new functional healthy ingredients and structures.
 
It is interesting to underline that engineered nanomaterials constitute large classes and subclasses of diverse materials as crystal-chitin (Chitin Nanofibril normally) used also in nature to mimic, for example, different kinds of colors.
 
Chitin is the second abundant biopolymer after cellulose, which is synthesized not only by an enormous number of living organisms such as shrimps and crabs, but also by fungal and yeasts cells.
 

Examples on the use of chitin nanofibrils to make innovative products for mimicking the nature will be reported.
