Two postdoctoral positions are available in the project “HEXPIN. Associative Interactions between Exopolysaccharides from Lactic Acid Bacteria and Milk Proteins. Gaining Insights Deployable in Design of Optimized Food Texture” (

http://www.bio.dtu.dk/english/Research/Research-groups/Enzyme-and-Protein-Chemistry/Hexpin

). The research is a collaboration between DTU Micro- and Nanotechnology, DTU Systems Biology and DTU Chemistry of the Technical University of Denmark.

Responsibilities and tasks

  • Biophysical techniques such as DLS, SEC, DMS, SPR, ITC, SAXS, X-ray crystallography, hydrogen-deuterium exchange-MS and molecular modelling will be applied to describe interactions between polysaccharides secreted by lactic acid bacteria and milk proteins and their potential impact on texture in dairy products. The project partners include Department of Food Science, University of Copenhagen and Chr. Hansen A/S as well as a number of other national and international collaborators.

Qualifications

  • Candidates should have a PhD degree or equivalent
Furthermore the successful candidates should have
  • A solid background in some of the relevant disciplines in biophysics
  • Experience with protein structure and function
  • Documented scientific excellence including publication of high quality research

It would furthermore be advantageous, but not essential for the candidate to have knowledge or experience with the following

  • Carbohydrates and polysaccharides
  • Protein crystallography and molecular modelling
  • Protein-carbohydrate interactions
  • Production of recombinant proteins and site-directed mutagenesis
