In my kitchen 1. - Chicken Paprika

Ingredients:
1/2 cup onion; finely chopped
1/4 cup shortening or bacon grease
1 teaspoon salt; or to taste
1 tablespoon Hungarian paprika; good quality, fresh!
1/2 teaspoon black pepper
1 roasting chicken; cut in pieces
1 1/2 cup water
1 cup sour cream
***GALUSKA (DUMPLINGS)***
3 large eggs; well beaten
6 1/2 cups water
2 1/2 cups flour, all-purpose; sifted
3 teaspoons salt

Directions:

Saute onions in shortening until tender but not brown. Combine salt, paprika, and black pepper and stir into the onions. Add chicken and fry until all sides are browned slightly. Add water and cover pan. Cook slowly 1 1/2 hours or until chicken is tender.

Toward the end of the chicken cooking time, make galuska (see below). Remove chicken from the skillet and blend sour cream into the liquid in the skillet. Put galuska into the sauce and serve hot with the chicken.

For Galuska: Mix eggs, 1/2 cup water, flour, and 2 teaspoons salt and beat until dough is smooth. Pour remaining 6 cups water and 1 teaspoon salt into a large pot, and bring to a boil. Spoon batter into boiling water, 1 teaspoon at a time, and boil 10 minutes. Drain and serve under gulyas or paprikash.

Another Note: Do =NOT= skimp on the paprika; it's the heart of this dish and cheap or stale paprika just won't cut it. Use a good Hungarian import and make sure it's fresh.

Welcome - about us

Welcome! Nanopaprika was cooked up by Hungarian chemistry PhD student in 2007. The main idea was to create something more personal than the other nano networks already on the Internet. Community is open to everyone from post-doctorial researchers and professors to students everywhere.

There is only one important assumption: you have to be interested in nano!

Nanopaprika is always looking for new partners, if you have any idea, contact me at editor@nanopaprika.eu
